In a medium bowl, combine the ground pork, garlic, Sriracha, sesame oil, fish sauce, chopped cilantro, kosher salt, and a few cracks of black pepper. Mix gently until just combined—do not overwork.
Form the pork mixture into 4 equal patties.
Toast the number of English muffins desired.
While muffins are toasting, preheat a grill or heat 1 Tbsp. of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 160°F).
Pair with Spicy Slaw using some of the reserved spicy slaw dressing as a condiment for the burgers. Brush slaw dressing on the inside of the English muffins and place each burger on the bottom bun. Top the burger with a generous portion of spicy slaw, and garnish with extra cilantro and a squirt of Sriracha if desired.
