In a large bowl, whisk together the mayonnaise, vinegar, Sriracha, sugar, and 1 tsp. of kosher salt. Using rice vinegar provides a richer flavor if you have it. Reserve ¼ cup of the dressing to use as a burger condiment if pairing with Sesame Pork Burgers.
Add the shredded cabbage, ¼ cup of cilantro, and scallions. Toss to coat evenly.
Taste and add the remaining ¼ cup of cilantro, and any additional salt or Sriracha as needed. Set aside to allow the flavors to meld.
